Pixie Bubble Tea

Description
Release your inner fairy with this delicious and fun bubble tea. While the garnishes are optional, they bring the magic of this drink to new levels.
Ingredients
- 1/2 cup water
- 1 green tea bag
- 1 tsp vanilla extract
- 3/4 cup milk
- 3/4 cup lychee juice
- 4 drops pink food coloring
- 2 tbsp simple syrup (or maple syrup)
- 1/2 cup quick-cooking tapioca pearls
- 2 tbsp brown sugar
- passion fruit whipped cream (recipe below)
- ice
- edible confetti, glitter, rainbow, or unicorn decorations
Instructions
- Bring ½ cup of water to a boil in a medium saucepan. Remove the pan from the heat and add the tea bags, vanilla, and milk. Let steep for 3-4 minutes. Discard tea bags.
- Add simple syrup or maple syrup to taste to sweeten the tea. Stir to combine.
- Stir in the lychee juice. You can blend the mixture with a frother or whisk with a fork to combine. Let the mixture come to room temperature.
- Cook the tapioca pearls according to package instructions. Drain.
- Pour the pearls into a bowl and sprinkle 2-3 tbsp brown sugar over the pearls. You may need to add 1-2 tbsp water to create a quick syrup. Set the pearls aside to come to room temperature.
- Follow the instructions below to make the whipped cream.
- To assemble the tea, spoon ½ of the tapioca pearls into the bottom of each serving glass.
- Add a large handful of ice to each glass.
- Pour ½ of the tea mixture on top of the ice in each glass.
- Top with passionfruit whipped cream.
- Sprinkle the edible confetti and decorations overtop.
Notes
To make homemade passionfruit whipped cream: Combine 1 cup of whipping cream (or coconut cream for dairy-free), 4-5 drops of orange food coloring, and 2 tbsp of passionfruit syrup. Whisk in a stand mixer or with a handheld mixer until peaks form (about 5-8 minutes)
Or, if you have a whipped cream dispenser, place ingredients into the dispenser and shake according to the manufacturer’s instructions. Follow the instructions for adding a gas charger when ready to use.
If you make the whipped cream ahead of time, store it in the refrigerator until ready to use. You can make it up to 24 hours in advance.
If you can’t find edible confetti and decorations, use pink and orange colored sprinkles.
